Lavender Goat Cheese & Blueberry Croissantwich

A scrumptious bite of summer: buttery, flaky croissant layered with creamy lavender-infused goat cheese, bursting blueberries, and a hint of fresh mint. Sweet, floral, tangy, and totally irresistible. Perfect for brunch, picnics, or treating yourself to something beautiful.

Ingredients:

2 fresh butter croissants (sliced in half)

4 oz goat cheese (softened)

½ tsp culinary lavender buds (lightly crushed)

1–2 tsp honey (optional, for sweetness)

½ cup fresh blueberries (or blueberry compote/jam)

Fresh mint or baby arugula (optional, for a peppery/herbal finish)

Butter (optional, for toasting croissant)

Instructions:

Infuse the cheese:
In a small bowl, mix the goat cheese with the lavender and honey (if using). Let it sit for 5–10 minutes to let the lavender flavor meld.

Toast the croissants (optional but recommended):
Lightly butter and toast the croissant halves in a pan until golden and warm.

Assemble:
Spread a generous layer of the lavender goat cheese onto the bottom half of each croissant.
Top with fresh blueberries or a spoonful of blueberry compote.

Add greens (optional):
A small handful of baby arugula or fresh mint adds a bright contrast.

Top and serve:
Place the top half of the croissant on and press gently. Serve immediately.
